Chicken Alfredo Pasta
Ingredients:
- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup unsalted butter
- 1/4 cup chopped fresh parsley
Instructions:
- Cook the fettuccine pasta according to the package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 6-8 minutes per side, or until cooked through. Remove from the skillet and let it rest for a few minutes. Slice the chicken into thin strips.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Reduce the heat to low and add the heavy cream, Parmesan cheese, and butter to the skillet. Stir until the sauce is smooth and creamy.
- Add the cooked fettuccine pasta to the skillet and toss to coat it with the sauce.
- Add the sliced chicken to the skillet and gently mix it with the pasta and sauce.
- Garnish with chopped fresh parsley.
- Serve hot and enjoy!
Broccoli and Cheddar Soup
Ingredients:
- 1 tablespoon butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups broccoli florets
- 3 cups vegetable or chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions:
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent.
- Add the broccoli florets and cook for a few minutes until they start to soften.
- Pour in the vegetable or chicken broth and bring the mixture to a boil. Reduce the heat and simmer for about 15-20 minutes until the broccoli is tender.
- Use an immersion blender or transfer the soup to a blender to puree it until smooth.
- Return the soup to the pot and stir in the shredded cheddar cheese and heavy cream. Cook over low heat until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
